Who says you can't have brunch for dinner? Chicken and waffles will satisfy anyone's craving for a brunch favorite in the middle of a busy mom's weekly schedule. Golden waffles topped with perfectly crisp chicken and your favorite syrup is sure to be a crowd pleaser.
Ingredients
Waffles*
1 cup Pioneer baking mix
3/4 c. Milk
1 egg
2 tbls melted butter
*(Make 4 waffles)
Chicken
16-20 chicken wing sections
1 tablespoon creole seasoning
1/2 tablespoon garlic pepper
2 tsp garlic powder
1 tsp onion powder
1/2 tsp kosher salt
1 tsp coarse black pepper
1 cup all purpose flour
Canola or Vegetable oil for frying
Step 1: Make the Chicken
Heat oil to 400 degrees in deep fryer or large cast iron Dutch oven (fitted with a cooking thermometer). In a medium bowl, add all waffle ingredients. Whisk together until just smooth - there will still be a few small lumps. Set aside waffle batter to let settle.
Add the chicken to a large bowl. Season the chicken with the dried seasoning and toss to coat all chicken in the seasoning. Add a cup of flour to the chicken bowl. Toss to ensure all the chicken is well coated in the flour (this step can also be done on a large paper bag that is sealed at the top). After chicken has been coated, add each piece to the deep fryer and cook until golden brown. Once done, after about 20-22 minutes, the chicken will begin to float to the top of the oil.
Step 2: Make the Waffles
While the chicken is cooking, prepare the waffles using a waffle iron. (Not if you don’t have a waffle iron, the same recipe can be used to make pancakes). Cook the waffle 3-4 minutes or until the indicator on the iron says ready. Remove the waffle from the iron and repeat for each waffle to be made.
Serve the waffles topped with chicken and your favorite waffle toppings. Enjoy!
