Jade’s Fancy Candy Cookies

Chewy in the center but crispy around the edges, these buttery chocolate candy chocolate chip cookies are sure to be a crowd-pleaser. No weird ingredients or complicated prep steps. Just a simple, super easy-to-make, amazingly delicious, cookie that you and your family will love!


Jade is my youngest and tiniest but what she lacks in size, she makes up for in sugar consumption. No seriously, she believes that sugar is one of the major food groups. So when she asked me to modify my chocolate chip cookie recipe to suit her cravings, I had to oblige. The result is a thin, crispy around the edge but chewy center chocolate chip cookie that has M&Ms in every bite. What's not to love?


 

Ingredients

  • 1 cup unsalted butter

  • 1 1/4 cup brown sugar

  • 1/4 cup corn syrup

  • 2 eggs

  • 2 1/2 cup cake flour

  • 3/4 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tablespoon vanilla

  • 1/2 tablespoon Southern Comfort

  • 1 cup M&Ms

  • 1/2 cup mini-Semisweet chocolate chips

Directions

  1. Preheat oven to 350° F.

  2. Combine cake flour, baking soda, baking powder and salt in a small bowl.  Set aside.

  3. Cream butter, corn syrup, brown sugar, Southern Comfort and vanilla extract in a large mixer bowl until creamy.

  4. Add eggs, one at a time, beating well after each addition.

  5. Gradually beat in flour mixture.

  6. Fold in M&Ms and chocolate chips. Drop by rounded tablespoon onto ungreased baking sheets.

  7. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.


Tips


Tip #1 - Make sure all your ingredients are at room temperature before starting. This will make the batter light and fluffy and combine better.


Tip #2 - Invest in a cookie scoop - they make getting all your cookies the same size a cinch!


Tip #3 - cookie dough can be stored in an air-tight container for up to two months. To make a new batch, let defrost at room temperature until you are able to scoop it easily.


 

Final Thoughts


I have never really been a sweets person - my only vices are chocolate chip cookies and ice cream (vanilla or chocolate chip only). I'm also not a huge fane of chocolate unless it's in a cookie but I have to say these cookies were really good and they stayed chewy even after a couple of days. These would also be awesome with nuts or dark chocolate or other candy pieces. I say play around with it and make your favorite version. Fancy can mean anything your heart desires so have fun, get your kids involved and bake some cookies!
