One Pan baked salmon with roasted golden potatoes and crisp broccoli - all made without tons of dishes!
Your List of Ingredients
• 1 lb Yukon gold or red potatoes, quartered
• 3 tablespoons olive oil
• 1 tbls Kosher salt, divided
• 1 1/2 tbls Garlic pepper, divided
• 3 - 4 (6 oz) salmon fillets (or firm fish)
• 2 1/2 tablespoons minced garlic, divided
• 3 tablespoons fresh chopped parsley
• Juice of 1 Lemon
• 1/2 cup unsalted butter
• 2 cups fresh broccoli florets (or any roastable green vegetable)
• 2 tablespoons dry white wine (substitute with 1/4 cup low-sodium chicken broth)
Step 1: Let’s Get Started
Heat oven to 400°F.
On a large rimmed baking sheet, toss together potatoes with the oil, 1/2 tablespoon of garlic, 2 teaspoons salt, and 1 teaspoon garlic pepper.
Spread out in an even layer and roast for 15 minutes until they're just starting to soften and brown.
Step 2: Prepare the fish
Meanwhile, in a small saucepan over medium heat, melt butter with lemon juice. Add 1 tablespoon minced garlic, 1 teaspoon garlic pepper and white wine. Simmer for 2 mins, remove from heat and set aside.
Push potatoes to one side of the sheet pan, arrange fish down the center and broccoli on the other side of the pan. Drizzle fish and broccoli with 1 tablespoon olive oil and season evenly with 1/2 tablespoon salt. Sprinkle broccoli with 1 teaspoon garlic pepper.
Pour the butter sauce evenly over the fish and broccoli, reserving 1/4 cup. Return to oven and continue baking until the potatoes are golden and fork-tender and the fish is opaque throughout, (about 12-15 minutes). Optional: broil in the last 2 minutes for charred edges.
Remove from oven and drizzle with remaining butter sauce. Serve hot and enjoy!
