Quick and easy but fancy enough to serve to guests. Turn your favorite smoked sausage into a healthy but tasty crowd favorite. Who says healthy food can't taste gourmet!

Ingredients
20 oz Smoked Sausage, sliced
2 cups diced zucchini
1 ½ cup Red Bell Pepper
1 ½ cup Red onion
2 cups broccoli florets
½ cup Extra Virgin Olive Oil
¼ cup melted, unsalted butter
1 Tbs minced garlic
1 ½ tbs Creole Seasoning or Old Bay Seasoning
1 ½ tbs Garlic Herb Seasoning
1 tbs Italian Seasoning
1 tsp Kosher Salt
1 tsp Black Pepper
Instructions
Preheat oven to 400 degrees. In a small bowl mix together the butter, oil and all dried seasoning, set aside. In a large bowl combine sliced sausage, zucchini, bell pepper, red onion, broccoli and garlic. Add the butter-oil mixture then toss to make sure all sausage and veggies are coated. Note: if dry, add a little more oil. Pour mixture onto a parchment lined baking sheet. Bake for 20-25 minutes until vegetables reach desired softness. Remove from the oven and serve over seasoned rice.
