Strawberry Biscuits

Flaky buttery biscuits with sweet diced strawberries in every bite. You may never make plain biscuits again!

To make a simple strawberry glaze, whisk together 1 cup of sifted powdered sugar, ½ tablespoon of strawberry jam/preserves, 1 teaspoon of vanilla and 1–2 tablespoons of heavy cream until smooth.

Preheat oven to 425°F. Place a cast-iron skillet in the oven with the melted butter as it warms. Once butter is fully melted, carefully remove and set aside.

In a large bowl, combine the flour, baking powder, baking soda, sugar, and salt. Mix well to evenly distribute.

Add the grated frozen butter to the dry ingredients. Using a pastry cutter or fork, gently cut the butter into the flour mixture until it resembles coarse crumbs.

In a small bowl, combine the buttermilk and vanilla extract. Create a well in the center of the dry ingredients and pour in most of the liquid. Gently fold together until just combined, adding the remaining liquid only as needed. The dough should be soft but not overly wet.

Gently fold the diced strawberries into the dough, being careful not to overmix.

Turn the dough out onto a lightly floured surface. Dust the top lightly with flour and gently pat it down to about ½-inch thickness. Avoid overworking the dough. Use a biscuit cutter or a sharp, round object to cut out biscuits. Note: Dip the cutter in flour between cuts to prevent sticking.

Arrange the biscuits in the melted butter inside the cast iron skillet, flipping each biscuit once so both sides are coated in butter. Bake for 20–22 minutes until the biscuits are golden brown and crisp on the bottom.

Serve warm with strawberry glaze or your favorite strawberry preserve.

    4 teaspoons baking powder
    1 ¼ teaspoons baking soda
    2 tablespoons granulated sugar
    ¾–1 cup buttermilk (start with ¾ cup)
    1 teaspoon vanilla extract
    ½ stick unsalted butter
    melted
    1 ½ sticks unsalted butter
    frozen and grated
    1 cup fresh strawberries
    diced
