Gourmet Mommie to the rescue with the fastest meal you'll ever cook. Five minute prep and ten minutes to cook - you'll have dinner on the table so fast, your family will be asking for this to be put into your weekly rotation.
Only a few simple ingredients so this are the key to this delicious and family friendly meal.
Ingredients
Thin Spaghetti or Angel Hair Pasta
Extra Large, peeled & deveined raw shrimp
1 Tablespoon Olive Oil
2 Tablespoons Herb Butter (use my recipe)
1 Tablespoon Garlic Pepper
2 teaspoons Kosher Salt
1/2 teaspoon Red Pepper
1/4 Cup White Wine or Chicken Stock
Juice and Zest of 1 Large Lemon
1 1/2 Tablespoon Minced Garlic
Fresh chopped Parsley (optional)
Fresh Shaved Parmesan (optional)
Step 1: Prep
Boil 4 quarts water over high heat.
Once water is boiling, add 1 palm-full of Kosher Salt.
Add dry pasta and cook per package instructions, stirring occasionally to prevent sticking.
Place shrimp in a large bowl and season with 1/2 tablespoon garlic pepper, 1 teaspoon salt and red pepper. Add 1 teaspoon olive oil and massage into shrimp until fully coated in seasoning. Set aside.
Step 2: Pull it All Together
Heat remaining olive oil and butter over medium low heat until butter is fully melted.
Add garlic and sauté for one minute. Add all of the remaining seasoning and garlic. Cook for one minute more.
Add white wine and cook for 3 minutes. Add lemon juice and zest.
Add shrimp to sauce and toss until fully coated. Cook until the shrimp is pink and tails are curled, about 5 - 6 minutes. Turn off heat.
Remove noodles from water and add directly to the pan with the shrimp. Turn the noodles in the sauce until fully coated. If the sauce is not stretching, you can add 1-2 tablespoons of pasta water.
Serve with fresh parsley and shaved parmesan as garnishes.
Sometimes we get busy but we still aim as moms to feed our families a homecooked meal each night.
