Soft, fluffy rolls filled with homemade vanilla custard, fresh bananas, and cinnamon sugar, then topped with brown butter cream cheese icing, vanilla wafers, and banana chips.

Make the Dough: In a mixing bowl, combine warm milk, yeast and 1 teaspoon of the white sugar. Let sit 5–10 minutes until foamy. Add remaining sugar, salt, eggs, butter, oil, sour cream, and vanilla. Add flour and knead 8–10 minutes until smooth and elastic.
Cover dough and let rise for 1 hour or until doubled in size.

Roll & Fill: In a small bowl, combine the brown sugar, cinnamon and nutmeg and set aside. Roll dough to ⅜–½ inch thickness. Spread vanilla custard in an even layer, then sprinkle sugar-spice mixture. Top with sliced bananas.

Shape & Bake: Roll into a log and cut into 8 large (1½-inch) rolls. Place in a greased baking dish, cover, and let rise 20 minutes. Bake at 350°F for about 35 minutes until golden and cooked through.

Ice & Finish: Beat icing ingredients until smooth. Spread over warm rolls and finish with crushed vanilla wafers and banana chips.

- 1 1/3 cups Bread flour
- 2 tsp rapid rise yeast
- 4 tbsp white sugar
- 3 tbsp brown sugar
- 1/2 tsp salt
- 3 tbsp melted salted butter
- 1 tbsp canola oil
- 2 medium eggs
- 1 cup whole milk
- 1 tbsp sour cream
- Vanilla (to taste)
Dough
- ¾ cup homemade vanilla custard
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 2 bananas (thinly sliced)
Filling
- 4 oz cream cheese
- 2 tbsp brown butter
- 3½ cups powdered sugar (sifted)
- 1 tsp vanilla
Icing
- Crushed vanilla wafers
- Banana chips
